How to Store Fresh Mozzarella and Burrata in Bali's Heat

Bali sits around 30°C with humidity that rarely drops below 70%. Fresh cheese does not like either. A burrata that was perfect at 7am can turn flat and sour by dinner if it spends the afternoon on a counter or in a warm car.

Fresh cheese is not aged cheese. There is no rind protecting it and no long ferment stabilising it. What you buy is milk, culture, rennet and salt, made days or hours ago. That is why it tastes so good, and why it needs a bit of care.

Here is how we tell our home customers and our chefs to handle it.

Keep it in its liquid

Mozzarella, bocconcini, ciliegini and burrata come packed in their own brine or whey for a reason. That liquid keeps the cheese hydrated and protects the outside layer from drying and hardening.

Never drain a tub you are not finishing. If you use half a pack of bocconcini, put the rest back in the liquid and seal it. If you have already drained it, cover the cheese with lightly salted water, about half a teaspoon of salt per cup, and refrigerate.

Stracciatella is the exception. It sits in cream, not brine, so keep it sealed in its own container and never top it up with water.

Set your fridge between 2°C and 4°C

Most home fridges in Bali run warmer than the number on the dial, especially if the door opens twenty times a day. Get a cheap fridge thermometer and check.

Store fresh cheese on a middle or lower shelf at the back. The door is the warmest part of the fridge and the worst place for it. Keep it away from the freezer vent too, because ice crystals wreck the texture of mozzarella permanently.

How long each one lasts once opened

  • Burrata and burratina: eat the same day you open it. The cream inside is the most delicate part of the whole cheese.
  • Stracciatella: two days, sealed and cold.
  • Mozzarella, bocconcini, ciliegini: three to four days in fresh brine.
  • Ricotta: two to three days, and always with a clean spoon.
  • Mozzarella block for pizza: up to a week wrapped tight, since it has less moisture.

Firmer cheeses like caciotta and asiatico are far more forgiving. Wrap them in baking paper, then a loose bag, and they will keep for weeks.

Do not freeze fresh cheese

Freezing splits the water from the protein. Mozzarella comes out rubbery and weeping, burrata comes out grainy. The only fresh cheese that survives the freezer is a block of pizza mozzarella, and only if you plan to melt it.

Take it out of the fridge before you serve it

Cold mutes flavour. Fresh cheese straight from the fridge tastes like almost nothing. Pull burrata, stracciatella and mozzarella out twenty to thirty minutes before serving and leave them in the liquid at room temperature. The fat softens, the milk aroma comes back, and the difference is not subtle.

On a hot open-air terrace, fifteen minutes is plenty.

If you are a restaurant or villa: the delivery window matters most

The biggest risk to fresh cheese in Bali is not your walk-in. It is the ninety minutes between the cooler and the fridge.

  • Have someone assigned to receive and put away dairy immediately. Do not let boxes sit at the pass.
  • Check the temperature of the product on arrival, not just the box.
  • Rotate strictly by date. Fresh cheese is not a product you can run first in, last out.
  • Order smaller amounts more often. With a local maker there is no reason to hold a week of burrata.
  • Portion stracciatella into service containers at the start of shift, then keep the master tub closed and cold.

How to tell it has turned

Fresh cheese tells you clearly. The brine goes cloudy and slightly slimy. The smell moves from sweet milk to sharp and yoghurty. The surface feels tacky instead of springy. Any of those, throw it out.

A little cloudiness in the liquid on day three is normal. A sour smell is not.

Buy it closer to home

Imported fresh cheese has already spent days in transit and cold chains you cannot see. That is time taken off its life before it reaches your kitchen.
